The sugar in the sushi rice keyed in perfectly with the dosage in the extravagant Katarina. The bubbles counteracting the oiliness of the raw salmon. The match also held up when dunked the sushi in soy sauce. But don’t overdo the wasabi.
Pizza & Chianti or other Tuscan reds 3/5
The acidity in Chianti is always great for tackling cooked cheese. But note to avoid too many toppings.
Crispy duck & Pinot Noir 5/5
Another timeless classic but how often do you order crispy duck on its own? Don’t overdo the hoisin sauce and don’t order dishes with black bean sauce. The silkily sweet 2003 Au Bon Climat Pinot is a perfect match, but cheaper Chilean Pinots, fruity Italian red like a Dolcetto. Midweight Merlots should work too.
